DFW Trip: Monday

Ham, Sirloin, Brisket, Rib Eye, Spicy Sausage, and chicken wrapped in bacon and Jalapeno peppers.
We hung around the house for a bit then headed out to a place called Hard Eight BBQ in Coppell, Texas. It’s in a sort of industrial area, not necessarily where I’d expect to see a BBQ place, but the smell of Mesquite permeated the air. They warn you when going in that people always order too much. They also tell you how they charge all meat by the pound, except for chickens. So we walk up to a smoke pit and tell the pit man meat after meat that we want and he proceeds to slice and carve up a pile of meat for each of us. They weigh and tag our trays and we move inside. It’s a pretty expansive place, they are prepared to feed an army here. We look around and both end up grabbing the Jalapeno sweet corn. I’m not sure how they make it, but it’s my favorite side this trip, I’ll start looking for recipes as soon as I’m back in LA.
So we had leftovers, but brought them home for finishing later. I dreamed of combining them with the leftover pork chops from last night and having another night of meat induced coma sleep. That is, after another bout of sitting on the porch and watching the world turn over beers. Brian’s wife made something out of crescent rolls, meat, cheese, and I’m not sure what else was hidden in it. But it was damn good, and sort of reminded me of a hamburger and cheese pizza, something I’ve not had since Indiana. Perhaps I’ll also have to make one of those, or whatever this is.
We also saw a rig today. There’s either oil in them thar rocks, or there’s natural gas. Either way, it’s fuel.
